Mango Salsa

mango_salsaI was planning on grilling some burgers for dinner and was thinking about making more of the guacamole to go with them when I saw some great Ataulfo mangos at Costco, which were very ripe and sweet.  The plan for mango salsa quickly formed in my mind…

I typically cut the mango gently into quarters (of course the stone in the middle prevents the mango actually forming 4 quarters).  The skin on each quarter then peels off very easily.  There are other options for cutting the mango (like slicing two large almost -halves off and then criss-crossing the mango flesh with a knife).mango_cutI diced up 2 mangos….

And then 1 yellow pepper…yellow_pepper_diced

And then 2 small tomatoes.

Lastly, dice 2 jalapenos (you can omit if you dislike spice, but I really enjoyed the spicy kick combined with the sweetness of the mangos), chop up 1/4 cup of cilantro, and mince 4 cloves of garlic.diced_veg

Mix the mangos and the vegetables together with 1 tablespoon of lemon juice and 2 tablespoons of lime juice and 1 teaspoon of salt.

It was delicious with the grilled burgers!

Mango Salsa

Ingredients

  • 2 Ataulfo mangoes, diced
  • 2 small tomatoes, diced
  • 1 bell pepper, diced
  • 1/4 cup cilantro, finely chopped
  • 4 cloves of garlic, minced
  • 2 jalapenos, diced (optional but strongly encouraged)
  • 2 tablespoons lime juice
  • 1 tablespoon lemon juice
  • 1 teaspoon salt

Instructions

  1. Mix all the ingredients together well.
  2. Serve chilled.
